Celeriac and Prawn Slaw

Total prep and cook time: less than 30 minutes
Ingredients:
- 6 raw, shelled prawns
- 1/2 teaspoon salt
- 1 celeriac, julienned
- 5 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup chopped parsley
- 1 tablespoon lemon juice
- zest of 1/2 lemon
Directions:
- Heat 1/4 inch of water and 1/2 teaspoon salt in a small saucepan with lid until boiling
- Add shelled prawns and steam for 3 to 4 minutes, until done
- Remove prawns from saucepan and allow to cool on a plate
- Chop prawns when cooled
- Use a vegetable peeler to remove hard skin from celeriac, cut into thin slices,
- then into thin strips
- Mix together in a bowl the mayo, mustard, parsley and lemon juice
- Add celeriac to slaw dressing and incorporate thoroughly
- Stir in chopped prawns
- Zest lemon over mixture and stir again
