Texas Tacos For Two (Recipe)

  • 1 lb. ground venison or elk
  • 1 pkg. Taco Seasoning
  • 12 oz. black beans
  • 1 12oz can green hot sauce
  • 1 8 oz. can diced tomatoes and green chiles
  • ½ cup of Feta cheese
  • 1 pkg. corn tortillas
  • ½ cup of water
  • ½ tbsp. Kosher salt
  • 2 tbsp. Red wine vinegar
  • 1 tsp. Olive oil


In a large frying pan combine red wine vinegar, ground meat and seasonings with a ½ cup of water and cook at medium high heat until done, drain of any fat. Heat the black beans and mash until spreadable. In a separate pan high heat tortillas, with a drizzle of olive oil until crisp, fold in half with paper towels to soak up excess oil. Spread the black beans into the shells and stuff with meat, diced tomatoes and green chiles and Feta cheese. Add hot sauce to suit your taste and serve with a glass of Zinfandel. Makes 6 tacos.
